How to Make the Best Greek Feta Potatoes in the Air Fryer

These roasted Greek potatoes come together with a handful of simple ingredients, so for the best results don't skip any of these ingredients! Here's what you will need:

Baby Potatoes

I prefer gold baby potatoes for this recipe, but I've also used red baby potatoes and they turned out great. If using larger potatoes, you may need to cut them into quarters. Ensure potatoes are cut to roughly the same size to ensure even cooking.

Olive oil

Sticking with traditional Greek cooking methods, olive oil is used to make the potatoes nice and crispy on the outside and infuse them with a little extra flavor. Do not substitute for any other oil.

Lemon Juice

Freshly squeezed lemon juice is best, but if you have to use a bottled substitute they will still turn out good. If you are really looking to amplify the lemon flavor, reserve some lemon juice to drizzle over the top of the potatoes once they are done cooking.

Dried Oregano

I do not recommend using fresh herbs for this recipe, as they will burn. Stick to dried.

Garlic Powder

Same as above, I love fresh garlic but find that it burns easily. Garlic powder works well in this recipe.

Salt and Pepper

Feel free to season to taste with salt and pepper, but for the best results do not skip out on these!

Feta Cheese

The star of the show, this cannot be substituted! You can use pre-crumbled feta from the grocery store or if you want to step it up then grab a fresh block of feta and crumble by hand. Slightly more work, but way more reward!

Instructions:

1. Preheat your air fryer to 400°F (200°C).

2. In a mixing bowl, combine the potatoes, lemon juice, olive oil, dried oregano, garlic powder, salt, and pepper. Toss everything together to ensure the potatoes are evenly coated.

3. Place the seasoned potatoes in the air fryer basket, making sure they are in a single layer without overcrowding.

4. Cook the potatoes in the air fryer for about 16-20 minutes, flipping them halfway through, until they turn golden brown and crispy and the inside is tender. Cooking times may vary depending on the size and make of your air fryer, as well as the size of your potatoes.

5. Once cooked, remove the potatoes from the air fryer and sprinkle the crumbled feta cheese over the top while they're still hot.

6. Give the potatoes a gentle toss to allow the feta to melt slightly. Serve immediately and enjoy!
