Instant Pot French Onion Soup (No Wine Recipe)

No problem. Whether you're looking for a family-friendly version or simply don't have wine on hand, this recipe has got you covered.

Ingredients:

  • 2.5 pounds of onions (thinly sliced)

  • 2 tablespoons butter

  • 4 cloves garlic, minced

  • 2 teaspoons sugar

  • 1 teaspoon fresh thyme

  • 1/4 teaspoon baking soda

  • 3 cups beef bone broth

  • 3 cups beef stock

  • 2 tablespoons balsamic vinegar

  • 2 tablespoons soy sauce

  • 1 teaspoon salt

  • 1 teaspoon accent seasoning (optional)

  • 1/2 teaspoon black pepper

  • Baguette slices

  • Gruyere or Swiss cheese, shredded


Instructions:

  1. Sauté the Onions: Set your Instant Pot to the sauté function. Melt the butter then toss in the sliced onions. Cook until the onions are softened and golden brown, stirring occasionally.

  2. Caramelize the Onions: Stir in the minced garlic, sugar, baking soda and thyme. Continue sautéing to caramelize the onions. After about 15-20 minutes the onions should be darkened.

  3. Pressure Cook: Pour in the beef stock, bone broth, balsamic vinegar, and soy sauce. Then add in salt and pepper (and optional accent seasoning) and stir. Secure the Instant Pot lid and set it to manual pressure cooking for 5 minutes.

  4. Quick Release: Once the pressure cooking is complete do a quick release.

  5. Serve: Ladle the soup into oven-safe bowls. Top each bowl with baguette slices and a generous sprinkling of Gruyere or Swiss cheese.

  6. Broil to Perfection: Place the bowls under the broiler for 2-3 minutes or until the cheese is melted and bubbly, with a golden-brown hue. Another option is to put them in the air fryer at 400 degrees for 5 minutes.

  7. Enjoy: Carefully remove the bowls, let them cool for at least 5 minutes, and savor the rich aroma and hearty flavors of your Instant Pot French Onion Soup.
